Carrot Book Cake




This is a book cake that i made for my dad a couple of months ago. so in saying that i don't have very detailed photos of this cake.

However, I had heapz of fun with this cake, despite the fact that it took almost all my day to get it finished.

The whole book was edible, covered with MMF (marshmallow fondant) and all the details on the cake was fondant as well.

The cake itself was carrot cake (possibly the best carrot cake recipe out there) and the filling was, surprise surprise CREAM CHEESE ICING. YUMMM

The cake was also crumb coated with cream cheese icing.

MMF - working with mmf is fairly easy and it tastes better than other fondants. i personally prefer mmf over other fondants.

Before covering with fondant, you have to crumb coat the cake with frosting (butter cream or cream cheese or any other) so that the fondant stays on the cake.

MAKING THE BOOK

- I made one cake of 14 by 9" and cut it to the right size, I then filled and crumb coated the cake.
- Made mmf and colored half of it green and brown and various other colors for the flowers.
- I then rolled out the fondant to approximately 1/8" (both the green color and the plain mmf)
I measured the height and length of the sides of my book (cake) and cut the white (plain) fondant accordingly
- Covered the 3 sides (2 widths and 1 length) and made marks on it with knife to resemble pages.
- Measured the top of the cake and cut the fondant 1/4 inch bigger than the cake from all the sides and cut 1" from the length(back of the book) of the fondant. placed the fondant leaving 1" of space on the cake (for the back side of the book).
- Then rolled and cut the brown fondant according to measurement (cutting 1/4" bigger than cake for the top and bottom of the book to level up with the rest of the fondant). placed it on the cake (used water to help bind together).
- For the bottom cover of the book, rolled out fondant (green and brown) and cut 1/4" and placed it around the book (cake) resembling the book cover.
- Made the bookmark and made a cut in the cake and inserted the book mark and secured with water.
The decorations were made using cutter and some were hand piped.

I know it looks all too confusing, but its not really. Its fairly easy, it was my fist time making a book cake and it didnt turn out too bad :):)




OH! and here is the recipe for the carrot cake that i used for this cake.

Carrot Cake

Ingredients

Eggs - 5
Sugar - 2 c
Oil - 375ml
Vanilla - 1 1/2 tsp
Plain Flour - 2 1/2 c
Cinnamon - 2 tbs
Baking soda - 1 1/2 tsp
Salt - 1tsp
Baking powder 2tsp
Pineapple crushed - drained to semi dry - 1c
Walnut chopped - 1c
Carrot grated - 2c

Method

- Whisk eggs until frothy
- Add sugar, oil and vanilla and mix
- Add the flour, cinnamon, salt, baking soda, baking powder and mix well
- Add the pineapple, walnut and carrot and give it a good mix.
- pour into greased and lined baking tin and bake for 45 on 180c or until done.

This cake turns out DELICIOUS, my family wouldn't want anything else for cake (which is annoying, because it gets boring after awhile). Do give it a try, i am sure youll love it.
